INGREDIENTS
- 1.5 cups of red lentils
- 1/4 cup of steamed rice(optional)
- 1/4 cup of olive oil
- 1/2 cup of chopped onions
- 3/4 teaspoon of salt
- Water
FOR GARNISH AND SERVING
- chopped parsley
- croutons
- lemon juice
INSTRUCTIONS
- Soak the lentils in cold water for about 1 hour. Wash and strain.
- In a sauce pan, roast the onions in hot olive oil until they sweat (approximately for 7 minutes on medium heat) Add the lentils and enough water to cover by 2cm. Add the salt.
- Cook for 25 minutes on medium heat.
- Once cooked, use the Hand Blender to blend the soup until smooth. Add hot water to achieve the desired consistency. You can add rice as optional addition.
- Garnish with chopped parsley, croutons, and a squeeze of lemon juice.
