INGREDIENTS

 

  • 1.5 cups of red lentils
  • 1/4 cup of steamed rice(optional)
  • 1/4 cup of olive oil
  • 1/2 cup of chopped onions
  • 3/4 teaspoon of salt
  • Water

 

FOR GARNISH AND SERVING

 

  • chopped parsley
  • croutons
  • lemon juice

INSTRUCTIONS

 

  1. Soak the lentils in cold water for about 1 hour. Wash and strain.

  2. In a sauce pan, roast the onions in hot olive oil until they sweat (approximately for 7 minutes on medium heat) Add the lentils and enough water to cover by 2cm. Add the salt.

  3. Cook for 25 minutes on medium heat.

  4. Once cooked, use the Hand Blender to blend the soup until smooth. Add hot water to achieve the desired consistency. You can add rice as optional addition.

  5. Garnish with chopped parsley, croutons, and a squeeze of lemon juice.
