INGREDIENTS
- ½ onion, chopped
- 2 ribs of celery, finely diced
- 2 tablespoons of butter
- 2 cloves of garlic, minced
- ½ cup of all-purpose flour
- ½ teaspoon of fresh thyme leaves, or ¼ teaspoon of dried thyme
- 2 cups of fresh corn kernels
- 1 large potato, peeled and diced
- 3 cups of chicken broth or vegetable broth
- 1 cup of milk
- ½ teaspoon of kosher salt
- ½ teaspoon of pepper
- chopped chives to garnish.
INSTRUCTIONS
- Combine the onion, celery, butter, and garlic in a saucepan. Cook over medium heat until the onion softens (about 4 minutes).
- Add the flour and thyme and cook for an additional 1 minute. Stir in the corn and potatoes.
- Pour in the broth, cream, salt, and pepper. Simmer uncovered for 15-20 minutes or until the potatoes are tender.
- Utilize the Beko Table Blender to blend the soup until smooth.
- Garnish with chives and serve warm.
