INGREDIENTS
- 1kg of mulberries (there’s no need to wash or remove the stalks)
- 200g of honey
- 1 lemon, juiced
INSTRUCTIONS
- Working in batches, place the mulberries in the Beko Starlight Table Blender and purée until smooth. Pour the puree into a muslin bag over a bowl and squeeze firmly to extract all the juice. Discard the seeds. This should yield approximately 500ml of juice.
- Put the mulberry juice into a saucepan and add the honey. Stir continuously and cook over low heat until the syrup comes to a boil. Simmer for 2 minutes, then add the lemon juice and remove from heat. Allow it to cool before pouring into sterilized glass bottles. Seal and store in a cool, dark place. Once opened, store in the refrigerator.
- Serve as you would for cordial, with plenty of ice and cold water.
