Ingredients:
- 3 medium-sized zucchinis
- 30 g mozzarella cheese.
- 2 tbsp olive oil
- 2 tbsp tomato sauce
- Raw cashews
Step by Step:
1. Preheat the oven to 180°C.
2. Cut the zucchini into thick, round slices and brush all sides with olive oil.
3. Bake the zucchinis for about 10 minutes on each side, until browned.
4. Next, spread tomato sauce on each slice, top with shredded mozzarella cheese. Bake
for 5 more minutes or so to melt the cheese. Serve with raw cashew on top. Enjoy!
