Ingredients.
● 120 g Chickpeas
● 200 g Onion
● 60 g Carrot
● 200 g Celery
● 100 g Celery stalk
● 50-60 g Garlic
● 80 ml Olive oil
● 1.2 l Water
● Salt & Black, White pepper, fresh dill
For the topping;
● Lemon slices
● Bread croutons
● Chopped parsley
Step by step
1. Soak the chickpeas overnight.
2. Boil until soft with 600 ml of water, do not throw away the boiling
water.
3. Put your oil in the soup pot and sauté your diced onions and garlic.
4. Put the diced carrots in the pot and sauté for 2-3 minutes.
5. Put celery stalks, boiled chickpeas and water.
6. Cook for another 20 minutes until the vegetables are tender.
7. When your soup is cooked, add coriander, lemon juice, salt and pepper.
8. Serve with finely chopped parsley, lemon slices and bread croutons.
