Ingredients
- 100g spinach
- 500g roast-beef
- 2 boiled eggs
- Pine nuts
Mix vinaigrette:
- 30ml olive oil
- Juice of half a lemon
- Juice of half a large orange
- Salt
- Pepper
Step by step
1. Boil and slice the spinach and the eggs.
2. Mix vinaigrette – oil, lemon juice and seasoning.
3. Toss the spinach with the dressing.
4. Fill the roast beef with the chopped eggs, spinach and pine nuts.
5. Roll it carefully.
6. Top with parmesan shavings.
