Ingredients:
- 500 g spinach
- 1 onion, chopped
- 100 g black rice
- 1 tbsp tomato paste
- 2 tbsp olive oil
- 300 ml water + 300 ml hot water
- 2 eggs
- 1 tsp Salt
- 1 tsp Pepper
- 1 tsp Chili flakes
For the Sauce:
- ½ cup unflavored yoghurt
- 1 clove garlic, mashed
- ¼ cup water
- Salt
Step by Step:
Rinse black rice took in a bowl and pour the how water on top. Rest it for 30 minutes.
Clean and cut the spinach.
Heat the olive oil on a pot, add onion sauté until them golden brown. Add tomato paste, stir well then add the spinach. Stir and cook spinach until all the water goes, stir time to time.
When all the water goes, drain rice and add the pot. Add 300 ml water and spices on top bring it to a boil. Low down the heat, close the lid and cook for 30 minutes.
In a bowl mix all sauce Ingredients and take a side.
After 30 minutes open the lid, crack the eggs on top, don’t mix let them to be sunny side up.
Take the spinach on two plates with the eggs on the middle. Pour the sauce around the eggs or side. Sprinkle chili flakes and serve with your favorite kind of bread. Enjoy!
