Ingredients
- 3/4 cauliflower head
- 2 eggs
- Juice of half of one lemon
- Coriander
- Salt
- Pepper
- Corn or whole wheat flour
Step by step
1. Preheat the oven to 190ºC.
2. Crush the cauliflower. Microwave for 2-3 minutes.
3. Squeeze out the extra juice from the cauliflower.
4. Whisk the eggs.
5. Squeeze the lemon.
6. Add in cauliflower, coriander, corn flour, salt and pepper. Mix well.
7. Shape 6 small tortillas and place them in a baking tray with parchment paper.
8. Bake for 8 min on each side.
