Ingredents:
- 1 eggplant
- 1 potato
- 2 tomatoes
- 2 red bell pepper
- 1 onion
- 100 g whole wheat flour
- 2 cloves garlic
- 1 egg
- 500 ml water
- 50 g shredded mozzarella
- 4 fresh purple basil leaves
- 2 tbsp olive oil
- 2 tsp salt
- 2 tsp pepper
- 1 tsp chili flakes
Step by Step:
1. Preheat oven 250°C. Prepare tray with baking sheet.
2. Clean all vegetables and place them in baking tray. Roast eggplant, bell pepper and
tomato for 40 minutes and take it out. Keep onion and potato 10 more minutes. Let
them cool down.
3. Peel the skin all vegetables separate potato aside. Take eggplant, bell pepper,
tomato, onion and garlics food processor, blend until mixture became smooth. Add
olive oil, 1 tsp salt, 1 tsp pepper and 1 tsp chili flakes. Take aside.
4. Grated roast potato, take them in a bowl. Add flour, 1 tsp salt, 1 tsp pepper and crack
the egg to the mixture. Knead with hand.
5. When the dough smooth, cut the dough for four pieces. Roll pieces one at a time. Cut
them 1 cm pieces. Rest 15 minutes before cooking.
6. Boil water in a pot with salt. Add pasta pieces and boil for 3 minutes.
7. Share pasta two places, pour sauce on top of hot pasta. Serve with shredded
mozzarella and purple basil. Enjoy!
