Ingredients:
● 75 g pumpkin, shredded
● 1 zucchini, seeds out, shredded
● 50 g celery, chopped
● 1 jalapeno pepper, cut roundly
● 2 tbsp sour cream
● 2 tbsp pumpkin seeds, toasted
For the marinate;
● 1 lime juice
● 1 tbsp olive oil
● 1 tsp apple vinegar
● 1 tsp salt
● 1 tsp pepper
Step by step
1. Combine marinated ingredients in a large bowl. Add pumpkin, zucchini and celery
on top. Cover the bowl with plastic wrap and rest for 20 minutes.
2. Potion vegetables to two serving plates without marinating juice. Place jalapeno
pepper and pumpkin seeds on top. Drizzle sour cream and serve it. Enjoy!
