Ingredients:
- 100 g steel cut oat
- 300 ml warm chicken stock
- 1 onion, chopped
- 1 clove garlic
- 1 carrot, grated
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp pepper
- 1 tsp turmeric
- 1 tsp cumin
- 1 tbsp scallion, chopped
For the Topping:
- 4 eggs
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp pepper
- Carrot, medium dice
- Cucumber, medium dice
- 1 tbsp black sesame seeds
Step by Step:
1. Heat the 1 tbsp olive oil thick bottom saucepan. Add onion and garlic sauté for 2
minutes, the add carrot, oats, chicken stock and spices and stir. Bring it to a boil,
reduce the heat and cook for 3 minutes stirring occasionally.
2. Another saucepan place eggs and bring it to a boil, turn down the heat and rest
eggs in hot water for 10 minutes. Peel and cut to half.
3. Portion oat pilaf to two serving bowls, place eggs on top of pilaf. Place cucumber
and carrot on the sides. Sprinkle black sesame seeds and serve it. Enjoy!
