Ingredients:
● 1 cup cauliflower
● 1 cup boiling water
● ½ cup peas
● 1 carrot, shredded
● 1 green pepper
● 1 clove garlic, minced
● 1 tsp salt
● 1 tsp pepper
● 1 tbsp olive oil
● 2 lemon slice
For the Topping:
● 1 cup chickpeas, ready to use
● 1 tbsp olive oil
● 1 tsp paprika
● 1 tsp salt
● 1 tsp pepper
● 1 tsp cumin
● 1 tsp garlic powder
● 1 tsp onion powder
● 1 cucumber, sliced roundly
Step by Step:
1. Preheat oven 200°C.
2. In a large bowl combine topping ingredients except cucumber and roasted for 10
minutes.
3. Chopped cauliflower in a chopper to rice size.
1. Heat the 1 tbsp olive oil in a thick bottom pan. Add carrot, garlic and pepper and
sauté for 2 minutes. Add cauliflower pieces and sauté for 1 minutes. Add peas and
boiling water, close the lid and cook for 12 minutes. Fluff up with fork.
2. Chop the tomatoes medium dice and mix with olive oil.
4. Take two serving bowls, place cauliflower pilaf first, then place chickpeas on side of
bowl. Serve with cucumber and lemon slice. Enjoy!
