Delicious Everyday: Avocado Corn Fritters
The unique comforting taste of corn is already a favourite of all children... With adding avocado in, it will now be a favourite of adults as well. Making fresh summer corn into crisp corn fritters is one of the fastest ways to turn corn on the cob into a breakfast.

Ingredients
● 50 g whole wheat flour
● 1 egg
● 2 spring onions sliced
● 130 g sweetcorn kernels
● 1 mild red chili (finely chopped)
● 3 tablespoon fresh coriander chopped
● Salt and pepper
● 1 avocado
● 25 ml lemon juice
● 25 ml olive oil
For the side;
● Yoghurt
● Fresh herbs
Step by step
1. Whisk together the flour and egg, and then add the chopped spring onions,
sweetcorn, finely chopped chili, and fresh coriander. Mix to combine, and season
generously.
2. Dice the avocado and add it to the mixture along with the lemon juice. Stir gently
until well mixed.
3. Heat the pan and add a heaped tablespoon of the better. Flatten it out slightly, and
shape into a circle.
4. Cook over a medium-low heat for around 5 minutes, until golden brown
underneath. Carefully turn the fritters with a spatula and repeat with the other side.
5. Mix yoghurt and fresh herbs you like.
6. Serve with yoghurt. Enjoy!
