Ingredients.
● 500 g Carrot
● 75 g Onion, fine brunoised
● 100 ml orange juice
● 600 ml Vegetable stock
● 30 g Butter
● Grated coconut
● Salt and white pepper
● Dry thyme
● Sour cream
Step by step
1. Peel and chop the carrots. Put the butter and carrots in a thick-bottomed saucepan and cook for 10 minutes over medium heat, stirring occasionally.
2. Add orange juice, vegetable stock and onion. When it boils, add thyme, salt and pepper. Reduce the heat and let it boil for 20-25 minutes with the lid closed. When the carrots are soft, take them off the heat and let them cool.
3. Puree them all at once with a blender. Return it to the pot and reheat it.
4. When serving, place in a soup bowls and top each with a spoonful of sour cream. Add some grated coconut as well. Enjoy!
