Ingredients:
- 150 g quinoa
- 1 tsp turmeric
- 1 tbsp balsamic vinegar
- 1 tbsp salt
- 100 g salmon
- ¼ cup dill, chopped
- 1 tbsp olive oil
- 50 g pineapple
- ½ red onion
- 1 tsp black pepper
- 1 tsp chili pepper
- 1 tsp cilantro
- 1 tsp lime juice
Step by Step:
1. Preheat the oven to 180°C.
2. Combine quinoa, 250 ml water and 1 tsp turmeric in a pot. Bring it to a boil, reduce
heat and simmer with closed lid for 15 minutes. Take from heat and rest for 10
minutes. Fluff up with two forks.
3. Reduce the balsamic vinegar until it thickens. Set aside.
4. Cut salmon pieces as big chunks then roast in the oven with olive oil for 25 minutes.
5. Cut the pineapple, chili, red onion into brunoise. Season with salt, chopped cilantro,
dill and lime juice. Add cooked quinoa and toss it well.
6. Serve salmon top on quinoa and balsamic sauce on side. Enjoy!
