Ingredients:
- 250 g beetroot
- 1 tsp olive oil
- 1 tsp thyme
- 1 tsp salt
- 80 g labneh
- 1 tbsp dill
- 1 tbsp raspberries
- ½ mandarin, peeled
- ½ kiwi, diced
- 1 tbsp blueberries
- 1 tbsp blackberries
- 3 leaves red basil
Step by Step:
1. Preheat oven to 200°C.
2. Toss the beets, olive oil, thyme and salt with wet baking sheet and foil on top, roast
it in oven until its tender.
3. Mix the labneh with chopped dill and clean the berries and red basil.
4. Serve the sliced beets with labneh, berries, mandarin, kiwi, and red basil. Enjoy!
