  • 150 g dried currants

These Currants Bread Buns are the kind of treat that bring comfort with every bite—soft, fluffy, and just the right touch of sweetness. Perfect for breakfast, a cozy snack, or a delightful pairing with your afternoon tea, these buns have a way of making any day feel a little more special.

With a golden, slightly crisp exterior and a soft, pillowy interior, each bite offers bursts of fruity goodness from the currants and a refreshing hint of lemon. Serve them warm, fresh from the oven, or save some for later—they’re just as delicious at room temperature. So, if you’re in the mood for a treat that’s easy to make but rich in flavor, these currant buns are sure to become a favorite in your kitchen!

Preparation:

  1. In a small bowl, dissolve the yeast and a pinch of sugar in lukewarm milk. Let it sit for about 5-10 minutes until frothy.

  2. In the bowl of a stand mixer fitted with a dough hook, combine the bread flour, remaining sugar, and salt. Make a well in the center and pour in the activated yeast mixture and softened butter.

  3. Mix everything together for 5-7 minutes using a stand mixer on medium speed, until the dough is smooth and elastic.

  4. Gradually add the dried currants and lemon zest to the dough during the last few minutes of kneading. Continue kneading until the currants are evenly distributed throughout the dough.

  5. Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1-1.5 hours, or until doubled in size.

  6. Once the dough has risen, punch it down gently to deflate. Divide the dough into 12 equal portions and shape each portion into a smooth ball. Place the balls on a baking tray lined with parchment paper, leaving some space between them.

  7. Cover the shaped buns loosely with a kitchen towel and let them rise again in a warm place for about 30-45 minutes. Meanwhile, preheat your oven to 200°C.

  8. Brush the risen buns gently with beaten egg.

  9. Bake in the preheated oven for 15-20 minutes, or until the buns are golden brown.

  10. Transfer the currant bread buns to a wire rack to cool completely before serving.
