Preparation

  1. Peel and dice the potatoes and yams into evenly sized pieces.
  2. In a large pot, bring water to a boil. Add the diced potatoes and yams to the boiling water. Cook until tender, about 15-20 minutes. Drain well.
  3. While the potatoes and yams are cooking, heat 25 g of butter in a skillet over medium heat. Add the thinly sliced onions and cook, stirring occasionally, until caramelized and golden brown, about 15-20 minutes. Add the minced garlic during the last 2-3 minutes of cooking and stir until fragrant. Set aside.
  4. In a large bowl, mash the cooked potatoes and yams until smooth using a potato masher.
  5. In a small saucepan, heat the heavy cream and the remaining 25 g of butter over medium-low heat until warmed through. Pour the warm cream mixture into the mashed potatoes and yams, stirring until well combined. Season with salt and pepper to taste.
  6. Transfer the creamy potato and yam puree to a serving dish. Top with the caramelized onions and garlic mixture.
  7. Garnish with chopped fresh parsley and serve.
