Preparation:
Rinse the dried fava beans and soak them overnight in plenty of water. Drain and rinse again before cooking.
In a large pot, cover the soaked fava beans with water and bring to a boil. Reduce heat to medium-low and simmer for about 45 minutes to 1 hour, until the beans are tender. Drain and set aside.
In a food processor, combine the fava beans, roasted red peppers, minced garlic, tahini, lemon juice, olive oil, ground cumin, and smoked paprika.
Blend until smooth and creamy. If needed, add a little water (10-20 ml) to achieve the desired consistency.
Taste the dip and season with salt and pepper to taste. Adjust the flavors by adding more lemon juice or spices if desired.
For a spicy version, add chili flakes or hot sauce to taste.
Transfer the dip to a serving bowl. Drizzle with a little extra olive oil and garnish with chopped fresh parsley.
