Preparation:
-
In a small bowl, dissolve the yeast and a pinch of sugar in lukewarm milk. Let it sit for about 5-10 minutes until frothy.
-
In the bowl of a stand mixer fitted with a dough hook, combine the bread flour, remaining sugar, and salt. Make a well in the center and pour in the activated yeast mixture and softened butter.
-
Mix everything together for 5-7 minutes using a stand mixer on medium speed, until the dough is smooth and elastic.
-
Gradually add the dried currants and lemon zest to the dough during the last few minutes of kneading. Continue kneading until the currants are evenly distributed throughout the dough.
-
Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1-1.5 hours, or until doubled in size.
-
Once the dough has risen, punch it down gently to deflate. Divide the dough into 12 equal portions and shape each portion into a smooth ball. Place the balls on a baking tray lined with parchment paper, leaving some space between them.
-
Cover the shaped buns loosely with a kitchen towel and let them rise again in a warm place for about 30-45 minutes. Meanwhile, preheat your oven to 200°C.
-
Brush the risen buns gently with beaten egg.
-
Bake in the preheated oven for 15-20 minutes, or until the buns are golden brown.
-
Transfer the currant bread buns to a wire rack to cool completely before serving.
-
Enjoy!
