  • 20 ml olive oil

With a filling of cream cheese, Parmesan, and fresh herbs, they’re the kind of dish that knows how to make an entrance and, equally importantly, how to vanish fast! Preparation:

  • Preheat your oven to 200°C.

  • Clean the mushrooms with a damp cloth or paper towel, then remove the stems and finely chop them.

  • In a mixing bowl, combine the softened cream cheese, grated Parmesan cheese, breadcrumbs, minced garlic, chopped parsley, chopped thyme, and the finely chopped mushroom stems. Mix well until thoroughly combined.

  • Arrange the mushroom caps, bottom side up, on a baking sheet.

  • Spoon the cheese and herb mixture evenly into each mushroom cap, pressing lightly to fill them.

  • Drizzle the stuffed mushrooms with olive oil and season with salt and pepper.

  • Bake in the preheated oven for 15-20 minutes, or until the mushrooms are tender and the filling is golden.

  • Remove from the oven and let them cool slightly. Garnish with fresh parsley and serve.
