Let’s get started with this easy, wholesome falafel wrap recipe.
Preparation
In a food processor, combine the drained chickpeas, roughly chopped onion, minced garlic, chopped fresh parsley, chopped fresh cilantro, ground cumin, ground coriander, chili powder, chickpea flour or all-purpose flour, salt, and pepper.
Pulse until the mixture is finely chopped and sticks together when pressed. It should have a coarse texture, not completely smooth.
Scoop about 2 tablespoons of the falafel mixture and shape it into small balls or patties using your hands. If the mixture is too wet, add a little more chickpea flour.
Preheat your air fryer to 200°C for 5 minutes.
Lightly coat the falafel balls with a mist of cooking spray or brush them with a small amount of oil.
Place the falafel balls in the air fryer basket in a single layer. Depending on the size of your air fryer, you may need to cook them in batches.
Air fry at 200°C for 12-15 minutes, shaking the basket halfway through, until the falafel balls are golden brown and crispy.
Warm the tortilla wraps according to package instructions.
Add shredded lettuce, thinly sliced tomatoes, cucumbers, and red onions on top of the sauce. Place 3-4 falafel balls on each wrap.
Fold in the sides of the tortilla wrap, then roll it up tightly from the bottom to enclose the filling.
Cut each wrap in half diagonally and serve immediately.
