Preparation:
Peel the beetroots and slice them thinly using a mandoline slicer or a sharp knife. Aim for slices that are about 1-2 mm thick.
In a mixing bowl, combine the crumbled feta cheese, cream cheese, chopped walnuts, balsamic vinegar, maple syrup, salt, and pepper. Mix well until smooth and creamy.
Lay out a large piece of plastic wrap or foil on a clean surface. Arrange the thinly sliced beetroots in overlapping rows on the plastic wrap, slightly overlapping each other to form a large rectangle.
Spread the cheese mixture evenly lengthwise along the bottom edge of the rectangular arrangement of beetroot slices.
Use the plastic wrap or foil to help tightly roll the beetroot slices around the cheese filling, forming a tight cylinder, similar to a large sushi roll.
Chill the roll in the fridge for at least 1 hour.
