INGREDIENTS
• grape leaves, drained and rinsed in warm water
• 150ml of olive oil
• 2 onions, fine chopped
• 1 ½ cups of uncooked white rice
• 1 1/2 cups of hot water, or as needed to cover
• 2 tablespoons of dried currants
• 2 tablespoons of pine nuts
• 1 tablespoon of ground cinnamon
• 1 tablespoon of dried mint
• 1 teaspoon of ground allspice
• 1 teaspoon of ground cumin
• 3 lemons
• 1 teaspoon of honey
INSTRUCTIONS
- Soak the rice with salt for 2 hours.
- Add a teaspoon of olive oil into the Beko Air Fryer and cook onions until tender at 175°C.
- In a pan, combine the onions, pine nuts, and rice over medium heat. Add cinnamon, allspice, and salt. Roast for approximately 10 minutes.
- Remove from heat and add currants, mint, and cumin. Let the mixture cool for 15 minutes.
- Prepare a large pot by placing an inverted plate on the bottom to protect the dolmas from direct heat during steaming.
- Cut off and discard any grape leaf stems. Place 1 teaspoon of the cooled rice mixture into the center of a leaf. Fold in the sides, then roll into a finger shape. Arrange the dolmas in the prepared pot and repeat for the remaining dolmas.
- • Pour in just enough water, lemon juice, and honey mix to reach the bottom of the first layer of dolmas.
- Cover and simmer over low heat for 30-45 minutes or until the rice is fully cooked. Check the water level often and add more as necessary.
